Tastes Better Together: PARMESAN + PARSLEY + LEMON

Grilled Corn With Lemon-Parsley Butter

4 ears sweet corn, in husk

Cooking spray

2 Tbsp butter

1 small lemon, juiced (about 2 Tbsp)

1 Tbsp finely chopped parsley

2 Tbsp grated Parmesan

Submerge corn in a large pot of cold water for 10 minutes. Remove, peel husks halfway down, and mist corn with cooking spray. Replace husks and grill over medium-high heat, turning, for about 10 to 15 minutes until husks are golden brown. Then move to indirect heat (with a gas grill, turn off the fuel) and close grill lid for 5 minutes.

Melt butter in a small saucepan with lemon juice and parsley. Keep warm.

Remove corn from grill and, wearing oven mitts, remove husks. Place ears on a serving plate, drizzle with melted parsley butter, and top with Parmesan.

MAKES 4 SERVINGS.

Per serving: 160 cal, 9 g fat (4 g sat), 19 g carbs, 80 mg sodium, 2 g fiber, 5 g protein

Three More Delicious Recipes

1. Pasta salad: Whisk together 3 Tbsp pesto, 2 Tbsp each lemon juice and Parmesan, 1 Tbsp olive oil, and 1/4 tsp salt. Pour over 6 oz cooked pasta, 1/2 cup chopped Italian flat-leaf parsley, and 1/2 cup chopped jarred roasted red peppers, and toss.

2. Crunchy breaded fish: In a shallow dish, mix 1/2 cup panko, zest from 1 lemon, 2 Tbsp grated Parmesan, and 2 Tbsp chopped parsley. Use to coat any white fish before baking.

3. A marinade or dressing: Combine 2 Tbsp each balsamic vinegar, olive oil, and lemon juice, then brush onto 2 portobello mushroom caps and 4 thick red onion slices. Save remaining marinade. Grill veggies, slice, and toss with greens, 3 oz sliced mozzarella, 3 sliced plum tomatoes, and 2 Tbsp each Parmesan and chopped parsley. Drizzle with marinade.
